Thank you for your interest in our work. As you can see from the photos we offer many different styles. The work we do essentially falls into three different categories depending on the type of flower you choose to decorate your cake with. We make two different types of sugar flowers and we also use fresh flowers.
The first type of sugar flower is called a royal icing flower. These are made with a pastry bag and are left to dry and harden. Unlike a butter cream flower, we use a stiff royal icing to develop a nice edge on our roses and lilies. These flowers can be tinted to any shade to match your decor.
The second type of sugar flower is called a gum paste or molded flower. These are made from a sugar dough that is rolled out very thin. Each petal is hand cut, tooled and arranged to produce an extremely lifelike flower. With this technique we can replicate the exact types of blooms that you are using in your centerpieces or bouquets.
Fresh flowers may also be used. We would confer with your florist so that we could provide you with the same or similar blooms for your cake.
We also use items other than flowers to decorate such as candy sea shells, marzipan fruits, dragees and fresh fruits.
All our cakes are baked to order using only the finest ingredients available. We offer a range of choices from the homespun, like Mom would make, to more gourmet choices. The taste of the cake is extremely important to us, not merely a vehicle to put pretty flowers on. View our list of cake flavors and fillings here.
Our cakes are primarily iced with a meringue butter cream. It is light, not too sweet, holds up well at room temperature and is a slightly off white color. We also ice our cakes with fondant, a sugar dough that is molded over the cake that has a hard, porcelain look to it. Kosher and non-dairy cakes are also available.
We deliver cakes within a 100 mile radius of Manhattan. Deliver charges apply.
